Prunes

1. Remove all the feathers from the pheasant.

2. Lay four pieces of streaky bacon out

3. Place the pheasant breast upside down on the bacon near the end of the bacon

4. Add prunes and cream cheese

5 Wrap the bacon around the breast and tuck the ends under the breast

6. Cook at 180 for 20 minutes

This is a very simple and very tasty way to cook pheasant breast.

The only trick to this is do not wait for the bacon to crisp up. If it has turned brown it the pheasant will be over cooked.

This is very good sliced cold as well as hot served with vegetables.
